
The modern beverage aisle has transformed from a duopoly of massive brands into a crowded landscape of exotic flavors and functional drinks. This shift stems from three primary factors: rapid advancements in flavor science, which allow for the isolation of complex aroma compounds; the rise of "functional" beverages designed to offer health benefits like improved sleep or gut health; and significantly lowered barriers to entry for new brands. Previously, high manufacturing minimums and limited access to canning lines restricted competition. Today, excess capacity in craft breweries and smaller-scale production facilities enable startups to launch niche products with minimal investment. These developments have fundamentally altered the beverage industry, shifting market power away from traditional giants and providing consumers with an unprecedented variety of choices tailored to specific, often experimental, tastes.
