502: Pacific Northwest Approaches to West Coast IPA with Breakside, Grand Fir, and Varietal
Craft Beer & Brewing Magazine Podcast
West Coast IPA has evolved beyond regional silos, shifting toward a modern, lighter, and drier expression that balances classic piney, resinous hop profiles with contemporary tropical and thiol-driven notes. Brewers prioritize clean bitterness, often utilizing CO2 extract and cool-pooling techniques to minimize astringency while maintaining structural depth. Malt bills have transitioned toward paler bases like Pilsner and flaked wheat to support body without adding unwanted color or fermentation issues. Hop selection remains critical, with brewers carefully choosing specific lots of Citra, Mosaic, and Simcoe to achieve desired flavor profiles, while experimenting with newer varieties like Comet and Dulcita in controlled amounts. Despite the stylistic overlap with Hazy IPA, the defining characteristics of modern West Coast IPA remain its crisp, drinkable finish and the intentional, layered application of hops that define the Pacific Northwest brewing identity.
