A three-month study investigated the impact of swapping ghee for canola oil in the diets of people with fatty liver. Those who used canola oil saw notable improvements in their liver health, including a significant drop in fatty liver grade—84% compared to just 25% in the ghee group. Additionally, they experienced lower levels of liver enzymes, cholesterol, and triglycerides, along with an average weight loss of about 4 kg. While some of these benefits can be attributed to weight loss, other positive metabolic changes indicate that canola oil offers advantages beyond just cutting calories. This study emphasizes the importance of considering the context of food choices, challenging the idea that seed oils are always unhealthy.
